Gordon Ramsay’s Ultimate Cookery Course S01E06

Update: So I decided to make the homemade tortilla chips and the black bean dip.  Holy mother of god those chips took a lot of work.  By work, I mean hours of sweat dripping down your back as you pound and roll dough into tortillas.  I’m never making my own tortilla chips again!  It’s much easier just to fry some store bought tortillas.

The bean dip was quite good.  I recommend adding salt and doubling the pepper.  It just didn’t have enough kick for my tastes, but it was still pretty damn good.  I made the dip in under 15 minutes.  The tortillas took several hours.

Please excuse me while I use this news site as my own personal recipe book.  I think you’ll enjoy it anyways ;)  The following recipes come from Ramsay’s cooking course.  I took the time to write them down so it’s easier to follow when cooking.  Ramsay simply eyeballs a lot of the ingredients, so I can’t provide exact measurements on many items.

  • Home Made Gnocchi
  • Spicy Black Beans with Feta over Home Made Tortilla Chips
  • Leek and Gruyere (greer) Rosti with Fried Eggs
  • Apple Crumble

 

Pro TIp: When boiling potatoes, always start them off in cold water

Pro Tip: When cooking pasta, add olive oil to water and always start in a rolling boil

 

Home Made Gnocchi

  • 2 baked potato
  • Ricotta 
  • Salt
  • Black Pepper
  • Flour
  • 1 Egg
  • Thyme
  • Olive oil
  • Butter
  • Peas
  • 1 lemon
  • 1 block of hard Parmesan cheese for grating
[baking potatoes, chose a large potato, brush potato with olive oil, cover with salt, put in the oven at 375 degrees for an hour and a half to two hours

For boiling potatoes, cut potato into quarters, bring to boil and let cook for 10 minutes]

Scoop potatoes out of skins into bowl

Mash potatoes until light and fluffy

Add spoonful of Ricotta

Add salt and pepper

Sieve 2 cups of flour over the mix

Add beaten egg to the mix by pouring into a hole in the center of the dough

Add thyme to the mix

 

Flour your hands generously and kneed mixture into a dough – fold in and push

As dough starts to get wet, add just a touch of flour

Form into a soft smooth ball

Cut ball of dough in half

Lightly flour hands and roll the dough into a sausage shape, inch thick

Flour knife blade, then cut the dough into bite sized pieces

Flour your finger and push down in the middle of each piece to create a pillow shape

 

Bring water to a boil

Add touch of olive oil

Flour hands and toss the gnocchi into the boiling water

Turn pan to stop gnocchi from sticking to the bottom

Let gnocchi simmer until they begin to float

 

Get a frying pan on high heat ready

Heat olive oil in pan to smoking

Use a slotted ladle to take the gnocchi out of the water and into the frying pan

Add a touch more pepper

Fry gnocchi until golden brown, turning over the gnocchi as they brown on one side

Add garden peas to the browned gnocchi

Add a few slices of butter

Add a some more thyme to the mix

Add lemon zest

 

Serve onto warm plate

Grate fine Parmesan cheese over plate

Spicy Black Beans with Feta over Home Made Tortilla Chips

  • 1 chopped white onion
  • 1 chopped garlic 
  • 1 chopped red chili pepper
  • 1 tablespoon of cumin
  • 1 tsp of cinnamon
  • 1 can of black beans
  • 2 avocados
  • 1 bunch of coriander / cilantro
  • Feta cheese
  • 3 cups corn flour (masa)
  • 1/4 stick of butter
  • Oil for frying tortilla chips
  • Sea Salt
  • Black Pepper

Prepare tortilla chips

Pour 3 cups corn flour into a bowl

Add splashes of water and kneed in bowl until dough doesn’t feel sticky

Dough should end firm and look like sourdough when split in half

 

Add quarter stick of butter, mash in with hands

Add good size pinch of raw sea salt

Add chopped cilantro and kneed until mixed.

 

Tear off chunks into large golf ball sized balls

Flatten balls by pressing with tortilla press or rolling pin

 

Put tortillas into a hot skillet, for about 30 seconds each side, no oil or butter needed.

Tortillas should be barely browned.

Stack and cut tortillas into quarters

 

Add a handful of tortilla chips at a time to deep oil fryer

Oil around 375 – fry chips until they stop bubbling

Drain on paper towels

Add olive oil to frying pan, heat until smoking

Add chopped onion

Fry onion until soft

Add garlic and chili

Add cumin

Add cinnamon

Add black beans

Cook together until soft

 

Serve black bean mixture over tortillas

Top with cubed avocado, feta cheese and cilantro

Leek and Gruyere (greer) Rosti with Fried Eggs

  • Shredded Leeks
  • Gruyere cheese
  • Sea Salt
  • Parboil Potatoes
  • Olive oil
  • Fresh Taragon

Add Leeks to a hot pan, add a knob of butter and season.

Fry until soft

Grate parboil potatoes and gruyere into bowl

Add leeks to the bowl

 

Pour olive oil into frying pan, heat until smoking

Pour in leek/potatoe mix so it is flat and covering the bottom of the pan

Let the mix cook until golden brown on bottom.

Slide mix on to a plate, take another plate, put it on top and flip it over

Return rosti to the pan until brown on the other side

 

Fry two eggs, sunny side up

Place eggs on top of rosti

Sprinkle tarragon over eggs

Apple  Crumble

  • 2 grated apples
  • 2 chunked apples
  • Sugar
  • Cinnamon
  • Fresh Vanilla pod
  • Dried cranberries
  • Lemon for zesting
  • ~1 cup flour
  • Demerara Sugar
  • ~1/2 stick butter
  • 1 bag of granola 

Baking pan on stove, low heat

Heat oven to 400

Grate 2 apples down to core, leave skin on

 

Add a couple tablespoons of sugar to hot pan

Add a touch of Cinnamon

Open vanilla pod by scrapping a knife down the pod, collecting all the seeds onto the knife, add to pan

 

Swirl pan, do not stir, and be patient

When the sugar goes brown, add the grated apple

Brown, then add the chunked apple and a handful of cranberries 

Add lemon zest, then chop lemon and squeeze juice over pan

Turn off heat and let sit while working on crumble

 

In a bowl, add flour and a couple tablespoons of Demerara sugar

Add butter and a touch of cinnamon and kneed

Add in granola until it constitutes 1/3rd of mix

Mix should form a crumble, adjust with butter/flour

 

Cover apple mix with crumble topping

Heat the pan over stove until bubbling, then put it in the oven

Bake for 12/14 minutes until golden brown

    buy a pack of corn tortilas, stack them, cut round stack into six equally sized triangle like chips, deep fry, done… no muss no fuss and 10x better then store bought already fried tortilla chips and 10x less work then the aforementioned recipe
